One thing the kids love in this house, is Saturday mornings. They get to catch a few cartoons they only see once a week on the tele and then they get waffles! Who doesn’t love homemade, thick, crispy on the outside, yummy on the inside waffles!

Cost for 8 waffles: $1.46 (or around 18¢ per waffle)
- 2 eggs
- 2 cups whole white wheat flour
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
What you’ll do:
- Preheat waffle iron.
- Beat eggs in large bowl with hand beater until fluffy.
- Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
- Spray preheated waffle iron with non-stick cooking spray.
- Pour mix onto hot waffle iron. Cook until golden brown.
- Profit!
This was a dinner solution for us one night when we didn't have food in the house for a proper meal and I was too spent to go shopping. Add scrambled eggs, bacon, and fruit, and it was very satisfying! Mmm
